About Pilot Coffee Roasters
Founded by Andy Wilkin and Jessie Holmes, Pilot Coffee Roasters started as a micro-roastery and café in Toronto’s Leslieville neighborhood. Inspired by the vibrant coffee culture of Te Aro in Wellington, New Zealand, the founders set out to offer exceptional coffee and build a community around specialty coffee.
Pilot’s mission is to source the best beans through strong, direct relationships with farmers and producers, ensuring sustainable and ethical practices at every step of the supply chain. Over the years, Pilot has become one of Canada’s leading specialty coffee roasters, known for precision roasting, a deep commitment to quality, and a passion for innovation.
